For scrolls that raise your stats, see Characteristic Scroll
When doing an exchange for equipment with random stats, you can see the item's stats before confirming the trade. This way you can just cancel the trade and try again if you don't like the stats. This is commonly used to guarantee 20 wisdom on the Agride axe exchange.
