Hunting is a unique profession. In other gathering professions, a character gathers resources that spawn in the same locations on the same maps; and these resources can only be gathered by a character with the correct profession. But the hunter gathers resources as drops from certain monsters after defeating the monster in regular combat. Because monsters spawn in a random fashion, this means the hunter sometimes needs to do a little, well, hunting, to find a resource to gather. And because monsters can be attacked by other players, regardless of profession, this means the hunter may face more competition in gathering a resource then other professions do, who only compete with each other. And yet, because a hunter can attack monsters as part of a group and still get a meat drop, a hunter can be helped by other players in the practicing of his or her profession, and this is unique indeed.
There are two downsides to being a hunter: You do not gain any profession experience from gathering meat (although you do gain class experience), and you need to equip the hunting tool as your weapon (although you do not need to actually use it).

You only get experience from preserving the meat. See Hunter/Recipes.

You get the meat when the monsters die, just like regular drops.
[edit] Amounts
The meat gain is determined just like a regular drop, with the following exception: meat drops are limited to one of each type droppable per monster per hunter, not one per monster. Multiple hunters in the same fight do not interfere with each other's meat drops.

The meat follows the monsters, so go to wherever the monster you want to hunt hangs out.
[edit] Hunting preservatives
Unlike most other professions, hunters can hunt all the items needed for their crafting. However, as the hunting itself doesn't give experience, it is far more commonly purchased from NPCs.
